Contemplating Waterloo by Adelbert’s Brewery

Pure heaven. 5/5 stars.

I’m not typically sentimental about beer. It may be a glorious gift from the gods, but it’s still just a (delicious) beverage. I rarely drink beers that I’ve had previously. I’d rather have something new!

One of the few exceptions is this beer, right here. I may have been a little tipsy the first time I tried it, but it made an impression on me nonetheless. It made such an impression that I jumped on an opportunity to buy more from Tavour and bought multiple bottles! That was a big deal for me at that point in my life. Then I did something else I’d never done. I didn’t drink them. That’s right, I bought a perishable good with the express intent of letting it deteriorate. I bought a piece of art, which the artist had deemed, “Good,” and decided to change it without knowing how it would turn out.

“Aging” and “cellaring” beer was a big deal for a little while. Breweries were even producing beer that was supposed to sit after you bought it for 3-6 months. Can you imagine? What if a cheesemonger sold you a wheel with a label reading, “Don’t eat this until you rediscover it in the back of your closet in a few months?” Inconceivable! Yet, that was the fad. And breweries are never shy about jumping on fads.

Regardless, I held these beers with intention. I liked the beer a lot. A LOT. So, not knowing if it would be produced again, or if the fledgling digital retailer would offer this Texas beer for sale in Oregon again, I bought extra and held it. The next bottle I opened was after the birth of my first child, almost 18 months later. The final bottle made it another year, when I celebrated keeping a child alive for 12 months (with only psychological scars, I’m sure). And, it was still good! It wasn’t the same beer any longer. I won’t lead you astray by saying that keeping the beer (regardless of method) past its brewer-intended shelf life improved it. But, it was still one of the best beers I’ve tasted. And, if Adelbert’s ever produces it again, you can place a guaranteed bet that I will find a way to get a case. Even if I have to go to Texas myself. How’s that for sentiment?
